Terry’s Chocolate Orange Rocky Road
Christmas is just 3 days away which to me, is the perfect time to get some festive baking done! I always enjoy baking some sweet treats for everyone to enjoy over Christmas. Every year I make my family-famous cheesecake and this year, as well as the cheesecake, I decided to make some Terry’s Chocolate Orange Rocky Road!
Rocky Road is one of my favourite treats and lately, I’ve been seeing all sorts of recipes that feature Terry’s Chocolate Orange. Despite chocolate oranges being available all year round I only ever get them at Christmas so it definitely feels more like a festive thing.
In today’s post, I thought I’d share with you all my recipe for this delicious Terry’s Chocolate Orange Rocky Road for you to make this year too! It’s super quick and easy to make, contains only chocolate and tastes amazing.
- 600g Terry’s Chocolate Orange (Roughly 4 of them)
- 400g Milk chocolate
- 200g White Chocolate
- 400g Digestive Biscuits
- 300g Mini marshmallows
- 250g Orange Matchmakers
- Orange food colouring
Terry’s Chocolate Orange Rocky Road Recipe
1.) First of all, break up the Terry’s Chocolate Oranges and then break each segment into smaller pieces. Add these to a large bowl along with the milk chocolate.
2.) Melt the chocolate in the bowl over a saucepan of boiling water, stirring continuously and making sure it doesn’t burn or turn lumpy. You want the chocolate to be as smooth as possible.
3.) Break up the biscuits into small pieces as well as the orange matchmakers and, once the chocolate in the bowl is completely melted, add it all in along with the mini marshmallows.
4.) Stir the entire mixture until everything is coated in chocolate then pour it out into two trays lined with baking paper and leave it in the fridge to set for a couple of hours.
5.) Once the mixture is set enough it’s time to decorate! Firstly melt the white chocolate in a bowl over a pan of boiling water and add in orange food colouring. Stir the chocolate continuously and keep adding in drops of food colouring until you’re happy with the colour.
6.) Using a spoon drizzle the white chocolate mix over the Rocky Road and then sprinkle on the colourful sprinkles!
7.) Again, leave it in the fridge to set for about 30-40 minutes and then cut it up into squares. This recipe does two trayfuls so depending on how you cut the squares it can easily make 50 pieces.
8.) Before serving I’d suggest leaving it out of the fridge for a little while for the chocolate to soften slightly.
